The first big (large/huge) paper model I built was the Galactica that I found in the Zealot forums (sorry, no link for various reasons). I am sorry that I can't remember who the author of the model is. I'm sure you can google for it and find it there and elsewhere. But, it is HUGE! It is 3.5ft long with beautiful textures. I want to say it is about 120 pages printed... so it takes a good long time to assemble. The nose and engine sections went together pretty well for me. The mid-section though was a big challenge. Things just didn't seem to want to fit properly, so I ended up fudging things so it looked reasonable and so I could eventually finish it. Maybe I'll reviisit it one day to do the model justice. Even being bodged a bit, it is a stunner and a bit of a monster. The landing bays slide in and out and have landing decks inside. Being my first large model, I underengineered the formers quite badly and that just made things that much more difficult. If I do it again I'll use foam core posterboard for the formers so they don't fall apart.
